I have been making this for years. My husband loves pancakes made using this recipe. I've successfully tweaked it by substituting wheat and bread flour, and it turned out well.
In a large mixing bowl add flour,sugar, dry milk, baking powder, sugar, and salt; mix thoroughly.
Cut the shortening into the dry Ingredients until the MIX is the consistency of corn meal. Store in covered glass or plastic container in a cool, dry place. Refrigerate in warm weather.
Here are some things I've discovered that make things easier. Use the largest mixing bowl in your kitchen or just make half a batch instead if you don't have a huge mixing bowl handy. I use a shortening cutter with blades, which works so much better than the type made with wires.
Crisco makes individual one-cup sticks that you just unwrap. Cost a little more, but the convenience is worth it if you hate messing with this stuff (like I do)
If you are measuring out the shortening from a big container, an adjustable measuring up works great. You just push it out into the bowl with the plunger instead of having to scrape it out of regular measuring cup. For clean up, Dawn Direct Foam is perfect for washing off the shortening. I put a squirt in the measuring cup first. Rinse it as I'm filling up the dish water in the sink below, and it's enough leftover suds to wash everything else.
